In Medieval 2: Total War, Jihads are "Holy Wars" fought by Muslims against the "infidel" Catholics to take control of the holy land (Jerusalem, Acre, etc.). In the game, your faction only participate in them if it is of the Islamic Religeon. The Catholic equivalent of this is a Crusade.
